It’s all about the rice

Ive been all about rice bowls. They are budget friendly and simple to make. This morning I had this budget breakfast

1 serving long grain white rice = $.15
1 cage free egg = $.30
Tsp of veg oil to keep egg from sticking to pan = $.10
A sprinkle of Trader Joe’s Everything But The Bagel topping (sesame seeds, poppy, garlic, onion, salt) =$.15
A dash of soy sauce $.05

lighly fry egg until white are set but yolk is still runny. Put on top of steaming hot rice, sprinkle toppings and stir up so the yolk makes the rice all creamy and nomnomnom. In some recipes, the egg is added in raw but I don’t like the texture as much that way

Total cost $.75

I have leftover rice for tomorrow and I may spend my extra challenge money on some spinach to add in

Challenge #47 - Hobo Bread

Ingredients:
2 1/2 C boiling water
2 C raisins ($3.29 per container, with 14 1/4C servings= .234 per serving = $1.88 for 2C)
4 tsp baking soda (.79 per box, 806 1/8 tsp servings= .03 for 4tsp)
1 C sweetener of some kind (1.99 4lb sugar, 226 2 tbsp servings = .009 per serving = .114 for 1C)
4 tbsp oil/shortening/butter/whatever, melted if necessary (1.79 for 48oz bottle of canola oil, 96 1 tbsp servings= .019 per serving = .076 for 4 tbsp)
4 C any flour/bran/flax seed meal (.99 5lb all purpose flour, 73 1/4C servings = .014 per serving = .224 for 4C)
pinch salt

If I've done the math right (big if) the cost = $2.324 for 2 loaves, rounding up for the water/salt and shortening for the pans = $1.17 per loaf. (If 16 slices a loaf and 2 slices a serving then >.15 a serving)

1) Pour the water over the raisins and baking soda and let soak overnight/several hours
2) Add the rest in order (do not drain the water from the soaked raisins)
3) Pour into 2 well greased loaf pans (it will not quite double in size)
4) Bake an hour at 350F/180C
5) Cool before removing from pans
