Cheese challenge? You don't have to tell me twice!
Grilled cheese sandwich vs. toasted cheese sandwich - you'll have to let me know if there's any difference in technique since it's pretty much referred to as "grilled cheese" here. But this isn't the standard white bread/American cheese concoction here. Not that there's anything wrong with that - an old fashioned grilled cheese with a side of cream of tomato soup makes for happy memories. I had to go with the cheese that I had on hand so it was a bit experimental here:
Fartgoblin Pumpernickel bread, light butter spread, smoked mozzarella, sliced peppered turkey (protein!), and an interesting sweet vanilla goat cheese that really isn't all that sweet. However shocked cow creamer is shocked! Cow AND goat cheese! Sacrilege! Pfft, shush cow creamer.

Sandwich the turkey in between layers of the meat and cheese and I went for the poor man's panini-press style

Shocked cow creamer is still appalled. Tough noogies, dude.

The verdict? Eh. Decent enough but seemed to be missing something. The flavor was pretty good but I can't decide if it needed to be peppered more or the other direction by putting in something sweet like jam. But it had cheese and so I still went OM NOM NOM
