Challenge #29 - Fried Things Potato Latkes

Use about one medium sized potato and half an onion per person.

Grate or put thro a food processor.

Add an egg, a pinch of salt and a tablespoon of flour and mix well.

Spoon dollops carefully into a frying pan with hot oil in it.

Fry on medium heat turning a few times until golden brown each side.

Bake in a medium oven for 20 mins.

Eat hot or cold.

Oooh. What kind of potatoes work best for this? I mean, I only have one type in the house, and I have no idea whether they are baking, boiling, or frying potatoes, but that doesn't stop me wanting to know!

I made an approximation, completely missing that the recipe requires onion! But I have some very tasty fried potato product in the oven now.
