Challenge #22: chocolate
This is my punishment for being a bad mod: I'm allergic to most forms of chocolate, I can only have white (it's something to do with theobromides, and it's very embarrassing having a racist chocolate allergy)… but I really love it. Like, if I was going to top myself (v unlikely) it would be literally Death By Chocolate.
And I know it's a thing most other people love, so…
So this week's challenge is to post loads of yummy recipes that I can't have. Use chocolate, cocoa, cacao nibs, anything you like, to make me suffer.

missdiane who was hoping for healthy things, but you can probably make something healthy with cocoa powder?)

A layer of wafer
A layer of chocolate spread (warmed so it goes on thinly). In my house my partner hates nuts and most chocolate spread is hazelnut, so I mixed two kids of orange essence into it- divine)
A layer of wafer
Repeat for about six layers.
Top with melted (dark in my case- vegan) chocolate with cocoa nibs in.
Put in the fridge to set :)

When I make it again I'll probably not bother to cook the butter but just melt it and double the spices (I didn't have pumpkin pie spice so just googled for the general proportion of cinnamon/ginger/allspice/nutmeg/cloves to use and approximated)

Hmmmmmmmmmmmmmm....challenge indeed. Though making something healthy-ish with chocolate is a bit better than cake. Must investigate and experiment.

Happily I had a recipe in mind anyway ;)
choc cake in 15 mins!
Mix an egg with an equal amount of olive oil and an equal amount of honey. (approx 2 fluid oz each)
melt 80g of dark choc in a bain-marie
Take choc off heat and mix in the eggy liquid.
Add just enough flour to dropping consistency, not like dough.
Fill 2 or 3 muffin tins with the mixture
Cook on high for approx 12 mins or until knife comes away clean
