Challenge #37: Garlic Ranch Mashed Potatoes
Garlic Ranch Mashed Potatoes
Ingredients:
Red potatoes, as many as needed (I used four)
Garlic, minced (As much as you can handle. This time I used about eleven cloves. It was the center of the garlic bulb, so they were mostly small)
Butter
Half and Half
Homemade ranch dressing (recipe is below)*
Because I used red potatoes, I left the skins on. If you are using a different kind of potato, peel them first. Wash potatoes. Boil the potatoes until tender. Drain. Or if you are in a hurry or are like me this week and don't have access to a working stove, you can “bake” them in the microwave.**
Once the potatoes are done, plop them into a large bowl. Take potato masher of choice and break them up a bit. Add butter to preference and mash until well incorporated. Add Half and Half. Continue to mash and add half and half until potatoes are creamy.
Stir in minced garlic.
Stir in homemade ranch dressing to taste.

*basic homemade ranch dressing:
Two teaspoons instant minced onion
½ teaspoon salt
1/8 teaspoon garlic powder
One tablespoon parsley flakes
Combine all ingredients in small bowl. Makes about two tablespoons of dressing mix, enough for two cups of dressing.
Dressing mix
One cup mayonnaise
One cup buttermilk
Combine ingredients in a glass jar. Shake until well-blended. Chill before serving.
That is just the basic recipe. It allows for a lot of adjustment and swaps based on personal preferences. It tastes infinitely better if you swap as many of the dried ingredients in the mix recipe as possible with fresh versions. The flavor is also more intense if you swap the mayonnaise with sour cream or plain yogurt. If you need to thicken it, add more mayonnaise/sour cream/yogurt. Chives are also a nice touch.
**Microwave instructions:
Wash potatoes and stab each one multiple times with a fork. Place potatoes in microwave and cook approximately ten minutes. The time will vary greatly depending on the wattage and age of your microwave, the size and type of your potatoes, and how many potatoes you are cooking. The general rule of thumb is six minutes for one potato and add an additional two – three minutes per each additional potato, but that was way too long for my four small red potatoes. If you are cooking more than three potatoes, I suggest starting with ten minutes, checking to see if they are tender enough to mash, and continue to cook in one to two minute increments until done.
