Just catching up here; hope that's OK.
Naleśniki Nadziewane z Jabłkami (Crêpes with apple filling)
3 eggs
1 1/2 cups milk
1 cup flour
3 tbsp sugar
pinch salt
2tbsp olive oil
Beat all ingredients together into a batter. Leave to rest for an hour or so. Cook as for crêpes/English pancakes. Fill with apple filling:
2 apples
2 tbsp butter
2 tbsp apple juice
simmered 20 mins or until soft.
Serves two generously.
Italianate Fridge Salad
1/2 packet elderly spinach
1 lonely mozzarella pearl, cut up as small as I could get away with
7 or 8 slightly squishy plum tomatoes
end of a jar of black olives
combined in a bowl, with the following dressing
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp salt
1/2 tsp mustard
generous grinding of pepper
stirred like crazy.
Serves one.
Squash Goulash (from this recipe from
tree_and_leaf)
1 tsp oil
1 onion, chopped
1 bell pepper, cut into chunks (I used green, but red would have been better, I think)
2 cloves garlic, crushed
2 tsp paprika
1 tsp caraway seeds
1 smallish butternut squash (or similar quantity of similar fruit, peeled, deseeded and cut into chunks)
4 carrots, peeled and in chunks (less if they're big ones)
125g red lentils, washed
500ml vegetable stock
2tbsp tomato purée
salt and pepper as desired
yoghurt to finish
Heat oil, brown onions (roughly 5 mins). Add red pepper, garlic, paprika and caraway seeds. Stir in and fry for 1 min.
Add everything else bar the yoghurt, and bring to the boil. Cook in the slow cooker for about 6 hours on low, or cover and cook in the oven at 180degC for about an hour.
To serve, top bowls of goulash with yoghurt and sprinkle on extra caraway seeds and paprika. Goes well with most sorts of carbohydrate.

There's quite a lot of protein in lentils, I think. You could add sausage or bacon along with the onions, though.
