For various reasons I ended up with an unexpected bunch of asparagus today. I also had a migraine and very little motivation to cook anything complicated, so Hollandaise Sauce was right out (which is a shame because asparagus with Hollandaise sauce is of of the yummiest things in the world). This is what I did:
Equipment
- Oven
- Baking tray with sides
- Box grater
- Hands
Ingredients
- A bunch of asparagus
- Olive oil
- Parmesan/Gran Pardano/Other flavoursome hard Italian Cheese
- Lime juice
- Salt and Pepper
Method
- preheat the oven to 220oc/425of/gas mark 7
- snap any woody bits off the bottom of the asparagus stems
- arrange the Asparagus on the baking tray so that no stem overlaps another stem but they are all close together
- slart a little bit of oil over it, and then use your hands to make sure each stem is very lightly coated
- sprinkle/grind salt and pepper over to taste
- shove it in the oven for 8 minutes
- while it's in the oven, grate about 3tbsps worth of your hard Italian cheese with the fine side of the box grater
- once the 8 minutes are up, put the asparagus onna plate, sprinkle over a little lime juice and your hard Italian cheese, and eat immediately
I expect this could also be a side dish for a sunday dinner or similar, but I quite like it as a light lunch. You could add a poached egg if you need a bit more protein; being all migrainey I just wanted vitamins today.
