You do need to think in advance to prep this, but the actual cook time is very small indeed, which is great for if you're hungry.

You will need:

- 3 tablespoons wholegrain mustard
- 2 teaspoons red chili powder
- 1 350ml tub of natural yoghurt
- 3 tablespoons ginger and garlic paste
- 2 teaspoons lemon juice
- 1 kilo chicken mini fillets or similar - reasonably sized bit but not huge.
- a big glass dish, preferably one with a lid
- 1 tsp powdered cumin seeds, 1 tsp ground black pepper, 1 tsp turmeric powder, 2 tsp cinnamon, 1 tsp powdered cloves and 2 tsp powdered cardamom, all mixed together.
- grated cheese of your choice - I like a good cheddar but obvs there are probably more authentic ones you could use
- salad of your choice

Method:

- mix the first five ingredients into a goo
- rub the goo into the chicken mini fillets with your hands
- roll the engooed fillets in the spice mix
- place them in the glass dish and leave them to marinate overnight - so probably best to do this after you've eaten on the previous evening if that makes sense. If your big glass dish doesn't have a lid just cover with clingfilm.
- after marination, grill the chicken bits until golden brown and cooked through, then plate up with the salad and sprinkle a small amount of cheese on top of the chicken so that it melts (don't overdo it, you want a delicate lattice, not a thick wodge).

Challenge #42 - Iftar

We're into Ramadan, so this week's challenge is to suggest something for iftar. So I suspect we're looking at recipes that are easy to scale up for a communal meal, and relatively high in both carbs for instant hit satifying and protein for making you feel better after a hard day's fast.

Super easy and delicious way to use up ripe or overripe bananas:

Two bananas
1-2 C oats (quick, old fashioned or gluten free, depending on banana size)
Add-ins of your choice - chocolate chips, dried fruit or nuts (1/2-1 cup, if desired)

Preheat your oven 350F/175C. Line a cookie sheet with parchment paper or something similar.
Mash the bananas (with a potato masher or even just a fork). Stir in the oats. Mix in the add-ins.
Spoon out onto cookie sheets flattening slightly. Bake about 15 minutes or until set (rolled oats will take longer to cook).
Cool a little before eating.
Makes 16 or so cookies, recipe can be easily halved.

This one is for when you've overindulged the night before. It contains vital fluids, sugars, and some protein. You can take a paracetamol with it too if you like ;)


You will need:

- one hungover human
- half a pint of milk
- a bananananananana
- some powdered ginger OR some finely grated fresh ginger root*
- some honey
- a blender


Method:

- peel the banananananananana and break it up into chunks then drop it in the blender
- add a teaspoon of honey
- add ginger to taste (ginger is good for settling poorly tums)
- pour in the half-pint of milk
- put the lid on and blend till smooth - although you can easily do this with a stick blender if you don't have a big one.
- cringe as the noise of the blender penetrates your delicate skull to its core and swear never to drink again.

Serve with doggie cuddles, a duvet, and a feeling of regret.



* I have one of these little spanish saucer things which makes grating ginger and/or garlic to a fine paste really easy, but I know not everyone has one

I've been a busy bee the last week, but it's not like I didn't fry anything, so I thought I would share with you how I make a sausage sandwich. This is pretty quick, and happens a couple of times a week.

Equipment Needed:
  • Frying pan/skillet
  • hob
  • Chopping board
  • knife
  • toaster, or preheated grill

Ingredients:
  • Two sausages
  • A tomato
  • Two slices of bread

This is an adaptation of a recipe from lovely Nadiya's British Food Adventure, which has been hands down my favourite recipe book of the last few months. The original reason for the adaptation was because of [personal profile] matgb's digestive problems with bread, but I liked this version myself too.

Equipment required:
  • An oven
  • A baking tray with muffin-sized depressions
  • A cheese grater
  • A knife
this makes three, which is a nice protein-rich breakfast or lunch for one person )

I'm not going to lie to you guys, caramelising onions takes ages. I'm one of those people who can't eat immediately upon getting up, though, and the hour and a half or so that this takes is enough for me to work up an appetite.

Your options for this breakfast are:
  • sausages (meaty or veggie)
  • mushrooms
  • soft sliced onions
  • hash browns
  • black pudding
  • fresh tomatoes (not tinned, though)
  • baked beans
  • bacon (or facon for vegetarians)
  • fried bread
  • toast
  • fried eggs
this is how I do it )
I am aware that some people prefer scrambled eggs rather than fried for breakfast; that's not really practical with this breakfast, what with everything else that's going on, but you can check out a scrambled egg recipe here (good set of comments on that post too).

I used this challenge to make a decadent breakfast as a treat. Y'know, the kitties had to wish me a Happy Mother's Day somehow.

I did a spin on the traditional eggs benedict, using salmon instead of canadian bacon/ham and adding some other bits and bobs (some out of necessity). I hadn't tried it before but this pastrami-style smoked salmon looked yummy at TJ's - and BOY was it yummy.


 
 
I had intended to also use Trader Joe's crumpets but I really must stop buying them anymore. They have a tendency to quickly grow mold no matter how you store them. I'd only purchased them on Thursday and yep, little green spots already. I had a tube of buttermilk biscuit dough in the fridge that I'd intended to use on something else but it had to do - and it did very well. I did have a loaf of nice bread I purchased yesterday but with benedict, you need something more sturdy than soft bread.

Since I didn't purchase any asparagus for a side dish, I quick sauteed some thin sliced scallion and some baby spinach to put in between the poached eggs and the salmon. I used this recipe for blender hollandaise sauce, though either I used a smidge too much lemon juice or it could have used another yolk since it turned out thin. But the flavor was there so that's all that truly counts, right? 

Enough babbling, though, here was the result - isn't it pretty?

I went to the Visit Wakefield Wakey Tweetup last night and am a teeny bit delicate. If you have a hangover, you need protein and you need vitamins. Therefore Eggs In Purgatory is the way to go. Nigella's original version is here for those who want to compare and contrast.

This is how my brain works: eggs are great for protein, but they are also bad for hearty/circulationy things because of their high nasty fat content. How can I make them better? I know! GARLIC!

Garlic Scrambled Eggs

Meal: Breakfast
Serves: One
Fatteningness: lots

Ingredients
  • Two eggs
  • Butter
  • One clove of garlic*
  • Black pepper
  • Something to serve the eggs on - toast is traditional, but I used potato waffles

Method
  • Finely (very finely) chop or crush the garlic
  • Slowly heat the butter in a saucepan; when it's stopped frothing add the garlic and take it off the heat so it cooks out really slowly
  • Put your bread/waffles in the toaster.
  • Break your eggs directly into the pan, put the pan back on the heat, and stir constantly with a wooden spoon
  • Grind the pepper into the cooking eggs
  • Keep stirring
  • Remove the pan from the heat about 30 seconds before the eggs are cooked; you don't want them overdone and they keep cooking in the pan.
  • Plate up your toast/waffles and put the eggs on top
  • Eat
  • Enjoy breathing all over your collegues all day
  • Enjoy farting eggy AND garlicky farts all night



* anybody who thinks I would ACTUALLY use a mere one clove of garlic in this has never met me. I generally use at least 3. At least.
