Challenge #29: Fried Things: Today's Breakfast

I've been a busy bee the last week, but it's not like I didn't fry anything, so I thought I would share with you how I make a sausage sandwich. This is pretty quick, and happens a couple of times a week.

- Frying pan/skillet
- hob
- Chopping board
- knife
- toaster, or preheated grill
Ingredients:
- Two sausages
- A tomato
- Two slices of bread
Method:
- Put your Frying pan/skillet on a medium heat, add a little fat to the bottom to prevent stickage and distribute the heat better (I used bacon fat today) and fry the sausages, turning frequently.
- Cut your tomato into 6ths
- This is where having a cast iron pan comes in handy, because you don't even have to take the sausages out of the pan for this bit: Once the sausages are cooked, cut them in half lengthwise and put them not-skin side down in the pan.
- Toast the bottom slice of what will be your sandwich, for structural integrity purposes. You can toast the top slice as well if you like, but I find that makes things over-crispy.
- Add the tomatoes to the pan and listen to the joyous sizzling.
- After about a minute turn the tomatoes over. Your pan should look like this:

- Assemble your sandwich: toasted bottom slice, then tomatoes, then sausage halves (skin side up), then top slice.
- Press down on the top slice so the tomatoes go all squishy and the juice soaks in to the sausages.
