The deli counter reduced cabinet was a bit of a bust, but the bread counter one was an embarrassment of riches (even got some Pokemon mini rolls for the daughter). So you're going to get a couple of posts, I'm afraid...
Firstly, Bread and Butter Pudding. Normal Bread and Butter Pudding, not the Extremely Boozy variant.

Firstly, Bread and Butter Pudding. Normal Bread and Butter Pudding, not the Extremely Boozy variant.
Equipment Required:
- Deep lasagne dish or similar that holds at least 2 pints.
- Oven.
- Balloon whisk.
- Measuring jug.
- 1 tbsp measuring spoon
- Butter knife
Ingredients:
- 6 thick or 8 medium slices of bread (today I used Hovis lower carb white, reduced from £1.00 to £0.55)
- Some butter
- Some dried fruit (today I used sultanas)
- 3 eggs
- 1 pint of milk (or ⅔ pt milk, ⅓ pt cream if you're feeling healthy)
- 4 tbsps brown sugar
- Nutmeg/cinnamon/mace/vanilla extract to taste (today I used ground mixed spice because I was feeling lazy).
Method:
- Pre heat the oven to 180oc electric/160oc fan/gas mark 4.
- Butter all the bread.
- Grease the inside of the dish with butter too.
- Cover the bottom of the lasagne dish with bread
- Sprinkle sultanas over the layer of bread, then spices if you're using them, then add another layer of bread...
- Keep layering fruit and bread til you've used up your bread, and give it a final sprinkle of spices on top
- In your measuring jug whisk together your milk, eggs and half the sugar.
- Pour it over the bread & butter & fruit (slowly so it soaks in).
- Sprinkle the rest of the sugar on top.
- Stick it in the oven for 40 minutes or so till it's golden brown and risen.
