I have a confession. I love canned wine. It's true! My favorite wines are the kind that can easily be mistaken for a slightly more sophisticated Capri Sun. One of my favorite canned wines is Trader Joe's Simpler Wines brand, which, I know might seem out of place during a pound challenge, but! It's not too expensive, really. A four pack is $5.99 at my local TJ's, and they come in Rosé (I love it), Peach Frizzante (which I'll be using today) and a rather bland White that I mostly ignore. Each can is 250 ml, and I'll be using half a can today (so approximately $.78's worth of fizzy wine.)

Strawberries are also in season in this part of the world! I picked up a pound of them from Aldi for $1.99. I'll be using 5 strawberries here, for about $0.50.

Ingredients:
- 1/2 can peach fizzy wine ($.78)
- 4-5 medium strawberries, tops cut off and sliced roughly ($0.50)
- 1-1/2 cup ice from my fridge, free (for a certain definitions of 'free')
- a few tbsp water from my fridge, free (for a certain definitions of 'free')
- pinch sugar or sugar substitute (optional, if your strawberries aren't sweet enough on their own)

Equipment:
- Blender (I used one of those small personal blenders for easier cleanup)
- Spatula or long-handled spoon to scrap with

Method:

- Take out blender and set up. Crush ice slightly before adding strawberries and wine, pausing occasionally scrap off bits on the side of the blender. Continue until you get the consistency you're looking for. Stop and taste, make adjustments as needed. Pour out into a container of choice, grab a crazy straw and enjoy summer in a glass! :)

I don't really cook much at breakfast time. It's usually toast or cereal with the occasional boiled eggs or scrambled eggs at the weekend. But I thought I would try something a little different for this challenge, but still keeping it fairly simple as I'm still not in my own kitchen.

This BBC Good Food recipe was my inspiration, but I made a few changes - namely leaving out the sugar and adjusting the quantities. Generally, I do just prefer porridge on its own (made with milk), but this was a nice alternative, although I feel that strawberries are not yet at their best and this would be nicer in summer. I felt it gave me a good bit of energy before heading out for an archery practice session, though.

Serves 2

Ingredients
80g-ish rolled porridge oats
1/2 tsp of cinnamon
milk (amount according to packet instructions on the porridge - or you could do what I did and just guess...)
2 bananas, sliced
200g-ish strawberries, halved

Method
Add the oats, cinnamon, milk and one sliced banana to a pan and cook according to the porridge oat pack instructions. Once it's ready, serve between two bowls and add the rest of the banana and the strawberries. Sprinkle with a little more cinnamon if desired.

I would have photographic evidence of my cobbled-together creation, however I can't find my camera. I've added it to my list of "Stuff Dine Can't Find" along with my floppy summer hat, the remote to my Apple TV (which without it, it's an unuseable black paperweight) and my mind.

Anyway, this was per the suggestion of Mom and it made for a nice light summery dinner-snack

Egg-crepe with fresh strawberries:
Chop several nice organic strawberries into small bits, add a little raw sugar or in today's case, a bit of splenda since I have to weigh in tomorrow morning and had fish and chips earlier
Whip up one egg with a little water (I played around a bit and added a touch of coconut milk and a dab of cornstarch along with a dash each of cinnamon sugar and ground nutmeg)
Spray medium sized skillet with nonstick spray (butter flavored helps) and tip pan around until the egg mixture coats the bottom
Realize after a bit that I should've just stuck with water as it keeps breaking apart, load on the macerated strawberries anyway
End up with more of an "thin egg omelet with strawberries" but enjoy thoroughly anyway :)
