You do need to think in advance to prep this, but the actual cook time is very small indeed, which is great for if you're hungry.

You will need:

- 3 tablespoons wholegrain mustard
- 2 teaspoons red chili powder
- 1 350ml tub of natural yoghurt
- 3 tablespoons ginger and garlic paste
- 2 teaspoons lemon juice
- 1 kilo chicken mini fillets or similar - reasonably sized bit but not huge.
- a big glass dish, preferably one with a lid
- 1 tsp powdered cumin seeds, 1 tsp ground black pepper, 1 tsp turmeric powder, 2 tsp cinnamon, 1 tsp powdered cloves and 2 tsp powdered cardamom, all mixed together.
- grated cheese of your choice - I like a good cheddar but obvs there are probably more authentic ones you could use
- salad of your choice

Method:

- mix the first five ingredients into a goo
- rub the goo into the chicken mini fillets with your hands
- roll the engooed fillets in the spice mix
- place them in the glass dish and leave them to marinate overnight - so probably best to do this after you've eaten on the previous evening if that makes sense. If your big glass dish doesn't have a lid just cover with clingfilm.
- after marination, grill the chicken bits until golden brown and cooked through, then plate up with the salad and sprinkle a small amount of cheese on top of the chicken so that it melts (don't overdo it, you want a delicate lattice, not a thick wodge).

Double Decker Delights

Perfect timing for this challenge since I had to make something for a potluck and decided on a dessert I adapted from a brownie recipe years and years ago.

2 C granulated sugar
1 3/4 C all purpose flour
1 tsp salt
1 C vegetable oil
5 eggs
1 tsp vanilla extract
1 C peanut butter
1/3 C cocoa powder
1/2-1 C peanut butter chips (coarsely chopped), if desired
1/2-1 C chocolate chips, if desired

1) Preheat oven 350F/175C and grease a 9x13 pan
2) Combine sugar, flour and salt
3) Separately, combine oil, eggs, and vanilla (I whisk them all together with a fork in the measuring cup used for the oil)
4) Combine the dry and wet mixtures
5) Divide dough (it doesn't have to be exact, just pour about half into another bowl)
6) Blend the peanut butter into one of the bowls and the cocoa into the other
7) Spread the peanut butter dough into the pan
8) Sprinkle the peanut butter chips on top if you're using them
9) Spread the cocoa dough over that (don't worry if it doesn't cover it completely- dollops of the cocoa dough over the peanut butter dough works just fine)
10) Sprinkle the chocolate chips on top, if you're using them
11) Cook for 28-30 minutes
