It was cool on Friday and Saturday so on Saturday I made naughty dark chocolate brownies with peanut butter swirled in.

I used this recipe

There were minor modifications due to lack of a couple of ingredients but I fared well enough. I used all Sugar in the Raw since my brown sugar was rock solid and also used dark cocoa. Either way it ended up tasty and I wish I could share the pic I took but my iPad isn't syncing

Ingredients
for the cookies
125g butter
100g sugar
1 tbsp golden syrup
225g plain flour
1 tsp ground ginger
1/2 tsp baking powder

for the filling
100g stoned dates
50g sugar
75ml water


Equipment
2 baking sheets
saucepan
hob
wooden spoon
sieve
table knife
sharp knife
wire rack


Method

Preheat the oven to 190degC. Grease the baking sheets.

Put the butter, sugar and syrup in a saucepan and heat gently until the butter melts. Stir until smooth. Sift the flour, ginger and baking powder into the mixture and mix to form a dough.

Roll the dough into small balls and arrange on the baking sheets. Flatten slightly with a knife. Bake for 12-15 minutes or until golden. Cool on the wire rack.

While the cookies are cooling, chop the dates and place them in a pan with the sugar and water. Heat gently, stirring, until the sugar dissolves. Bring to the boil and then reduce the heat and cook gently for about 15 minutes until the mixture reduces to a thick, jam-like paste. Remove from the heat and allow to cool. Use to sandwich the cookies together in pairs.


These are actually a bit sweet to my taste, and I think I'd experiment with reducing the sugar in the cookie mixture in future. Maybe in the date mixture, too.

Ingredients
2 tbsp butter
2 eggs
salt and pepper
(optional: grated cheese, chopped ham, etc)

Equipment
oven
2 ramekins
roasting pan
kettle

Method
Preheat the oven to about 180degC. Put the ramekins into the roasting pan and divide the butter between them. Put them into the oven for about 3 minutes for the butter to melt.

Meanwhile, fill the kettle and boil it.

When the butter has melted, take the pan out of the oven, add any optional extras to the bottom of the ramekins, and then break an egg into each. Season well.

Pour the hot water into the pan so it comes up around the outside of the ramekins, and return to the oven to bake for 8-10 minutes, depending on how runny you like your eggs.


I served this with potato rösti, asparagus, and a cherry tomato sauce. It was good.

Baked Oatmeal

This breakfast dish from Once Upon a Chef is a big hit at my house. I adapted it to use just one bowl because I'm lazy like that. Her recipe uses cow's milk but I've made it with coconut milk and almond milk, too. She calls for 3/4 cup of brown sugar but that's too sweet for me so I cut that back to a half cup. You could also use maple syrup if you want, just remember to cut back on the other liquid. If you want to make it vegan, you can subtitute flax eggs. This recipe is flexible in regards to fruit, too. I've substituted different kinds of apples, blueberries, frozen and fresh, fresh strawberries, ripe bananas and fresh cranberries, and various nuts and dried fruits, too, depending on what I've had in the house. I've always made it in a 9x9 square pan but the pan size is flexible as well.

Amish-Style Baked Oatmeal (Adapted from Once Upon a Chef)

Servings: 6
Prep Time: It takes me 20 minutes.
Cook Time: 40 Minutes
Total Time: 60 Minutes

Ingredients

2 cups old-fashioned rolled oats (not instant)
½ to 3/4 cup light brown sugar
1 cup chopped walnuts or pecans, divided
1/2 cup raisins (or other dried or frozen fruit)
1 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
2 large eggs
2 cups milk
1 teaspoon vanilla extract
4 tablespoons unsalted butter, melted, plus more for greasing the dish (note: I just use a pastry brush and steal a bit to grease the pan)
2 apples, such as Honey Crisp, peeled and cut into 1/2-inch chunks (about 2 cups). You can substitute other fresh or frozen fruits to suit your taste.

Instructions

Preheat the oven to 325°F. Grease an 8 or 9-inch baking dish with butter or oil.

Scatter the apples (or other fresh or frozen fruits) evenly on the bottom of the prepared baking dish.

In a medium bowl, combine the oats, brown sugar, 1/2 cup of the nuts, raisins and/or other dried fruits, baking powder, cinnamon and salt. Mix well. Pour the oatmeal mixture on top of the apples and spread evenly.

In the same bowl, break up the eggs with a whisk or large spoon; then stir together the milk and vanilla until well combined. Add the melted butter. Pour the liquids into the baking pan over the oats and fruit.

Sprinkle the remaining 1/2 cup nuts on top. Bake for 40-45 minutes, until the top is golden and the oats are set. Serve warm or at room temperature. I put the covered leftovers in the refrigerator and let my family reheat individual servings in the microwave when they get up the next day and want breakfast.

Double Decker Delights

Perfect timing for this challenge since I had to make something for a potluck and decided on a dessert I adapted from a brownie recipe years and years ago.

2 C granulated sugar
1 3/4 C all purpose flour
1 tsp salt
1 C vegetable oil
5 eggs
1 tsp vanilla extract
1 C peanut butter
1/3 C cocoa powder
1/2-1 C peanut butter chips (coarsely chopped), if desired
1/2-1 C chocolate chips, if desired

1) Preheat oven 350F/175C and grease a 9x13 pan
2) Combine sugar, flour and salt
3) Separately, combine oil, eggs, and vanilla (I whisk them all together with a fork in the measuring cup used for the oil)
4) Combine the dry and wet mixtures
5) Divide dough (it doesn't have to be exact, just pour about half into another bowl)
6) Blend the peanut butter into one of the bowls and the cocoa into the other
7) Spread the peanut butter dough into the pan
8) Sprinkle the peanut butter chips on top if you're using them
9) Spread the cocoa dough over that (don't worry if it doesn't cover it completely- dollops of the cocoa dough over the peanut butter dough works just fine)
10) Sprinkle the chocolate chips on top, if you're using them
11) Cook for 28-30 minutes
